Moro de Guandules - Rice and Green Pigeon Peas

Dominican food!




Moro de guandules, is rice and green pigeon peas all together with a mix of herbs and condiments you can add coconut milk if you what and trust me you won't regret it.




Ingredients
1 Can of Green Pigeon peas (Goya)
2 Cups of white rice
2 cups of water
1 Bunch of Cilantro
1 Red onion
5 Cloves of garlic
1 Green pepper
4 Tablespoon of olive oil
1 Tablespoon of oil
1 Cup of coconut milk (optional)
Salt and Pepper
4 teaspoon of Oregano
















Step 1
In a pan with a tablespoon of oil add 1/4 of the finely chopped onions, as it becomes transparent add the can of green pigeon peas without water.

Step 2
Stir well and add salt and pepper.

Step 3
In a food processor or blender add the cilantro thoroughly washed, the rest of the onion, green pepper, garlic and two tablespoons of olive oil; Until everything is greenish paste.

Step 4
This sauce will give a beautiful green color, add this to the pan with the green pigeon peas. Stir everything well and cook over medium low heat for 10 minutes. In another pot add water to heat.

Step 5 (optional)
If you want  add the coconut milk. if not it will taste good as well! if you do just add less water just to cover the rice.


Step 6 
Add the water to the Green pigeon peas and stir and add the rest of the olive oil.

Step 7 
Add the rice and stir, taste it to see if you need more salt. Put on high heat and stir until the rice absorbs the water.

Step 8
Reduce heat to low and cover and leave for 10-15 minutes. flip over and cover again for 10 minutes more.







Taste to see that the rice is soft and all done!
 You can serve with meat and salad!
